In his book The Tao of Nutrition by Maoshing Ni, the author makes a distinction between mature (white) mushrooms and immature (button mushrooms). Basically the emphasis is that the more mature mushrooms are colder in nature and better for clearing summer heat. There is little information about which channels are entered by the mature mushroom, but it is noted that mature white mushrooms help to clear toxins and resolve irritability due to summer heat[22]. White mushrooms are also contraindicated for those with cold in the stomach[22].

Both white and button mushrooms are the common supermarket varieties of mushroom. White mushrooms and button mushrooms actually refer to the same type of mushroom, scientifically known as Agaricus bisporus. However, there are some distinctions based on maturity and color:

Button Mushroom: This term typically refers to the immature form of the white mushroom. Button mushrooms are small, round, and have a smooth, white cap. They are commonly used in salads, soups, and various dishes.

White Mushroom: As the button mushroom matures, it becomes what is commonly referred to as a white mushroom. The cap enlarges and may start to open slightly, revealing more of the gills underneath. While still white, these mushrooms can be slightly more flavorful compared to their younger counterparts.

In summary, button mushrooms are the young, immature form of white mushrooms. Both are widely used in cooking and have similar flavor profiles, but the white mushroom is the more mature version.
