Corn tacos with Beef and Vegetables Topper, plus Side of Blackeyed Peas, Avocado, Tomato, and Cucumber for toppers

Cooking Instructions: Add 9 oz pre-cooked beef, preferrably cooked long time at low temperature. Saute with a covered lid: Beef, 1/2 small onion, 1 medium to large size calabashi (winter) squash, 1 medium carrot (chopped), 1 small bunch of chopped coriander (cilantro), a splash of soy sauce, a splash of honey barbecue sauce, a splash of worchestershire sauce. Add 1 cup of water. Combine all ingredients, over with lid and simmer for 20-30 minutes until vegetables are tender. In a separate bowl, prepare beans to be used for taco toppers. Then in another bowl, chop a cucumber, tomato, and avocado blend for additional toppers. Use minimal spices.
