White Fungus and Pear Soup

Cooking Instructions: Soak a large piece of dried white fungus in warm water for about an hour, until it becomes soft and expands. Trim away the tough center and tear the fungus into smaller pieces. Peel and core one Asian pear and cut it into chunks. In a medium pot, add about five cups of water, the white fungus, a handful of lily bulb, two tablespoons of goji berries, and the pieces of diced pear. Bring everything to a gentle boil, then reduce to a low simmer and cook for forty to fifty minutes, until the soup becomes slightly thick and translucent. Towards the end add your goji berries and your preferred sweetener. Cook for five to ten more minutes, and adjust sweetness to your liking. Serve the soup warm — not hot — in the evening, when Yin energy is at its peak and the body benefits most from nourishment.

Treats Eastern: Tonifies lung yin and strongly moistens dryness, especially in the lung and large intestine. Also tonifies kidney yin a strengthen lung qi. A good seasonal recipe to combat dryness in the fall. This recipe also soothes the spirit and enters the metal element - lung and large intestine - which are primarily associated with the emotion of grief.
