Cooking Instructions: lightly coat pan with virgin coconut oil. beat two eggs. add 1/3 cup chopped spinach, and 1/4 cup shiitake mushrooms. Add a pinch of salt. Cook on low to medium heat, until egg starts to solidify then add 1 slice of sharp cheddar cheese on top. Finish cooking until eggs turn golden brown - do not overcook. Cheese should be melted.
